Maria's Da Bomb Dot Com Brookies

Hear yee hear yee, come one, come all, feast your eyes on this splendiferous, refined sugar recipe that will make you wonder if I have tricked you! Alas, Halloween is over, so no trick here, just a lovely treat! Let me tell you how to make the most glorious stuffed brookies. These are refined sugar, gluten-free, AND a celebration in your mouth! What we have here is a combination of a cookie and a brownie, with a delicious Oreo cookie layered between its decadent flavors!

 

Cookie Batter from heaven!

1-3 dates (placed in boiling water)

¼ cup honey

¼ cup tahini

* (Tahini is a paste made from roasted sesame seeds, if you have a sesame allergy, you can substitute the same ratio for ¼ cup almond butter instead)

2 tablespoons almond butter

3 tablespoons butter

½ teaspoon vanilla

* Remove dates from water and add to a blender

* Add above ingredients to the same blender and blend until a smooth mixture forms

3 tablespoons flaxseed

¼ teaspoon salt

½ teaspoon baking soda

1 cup almond flour

* Add dry ingredients to the wet mixture above until a thick cookie batter forms

1 cup white chocolate chips (refined sugar options available at Whole Foods)

* Incorporate into the cookie dough batter

* Set aside and chill in the fridge until ready to build!

 

Brownie Batter!

4 tablespoons butter

½ cup chocolate of choice (I prefer 70% or higher dark chocolate for rich flavor and antioxidants)

*Melt the butter and chocolate together in a microwave-safe bowl

5-6 dates (boiled in water until soft)

½ cup almond butter

¼ cup honey

½ teaspoon vanilla

* Remove softened dates from water and add to a blender (You can use the same blender from cookie mixture without washing it, it's extra flavor!)

* Add above ingredients(dates, almond butter, honey, vanilla) to same blender and blend until smooth mixture forms

* Add above mixture and the chocolate mixture to a mixing bowl until combined

¼ teaspoon salt

1 tablespoon flax seeds

½ to 1 cup cocoa powder (if you desire a less rich brownie, you can sub half a cup of flour of your choosing)

* Add dry ingredients into the wet mixture above and set aside

 

Now we are ready to play god and build this decadent dessert!

Set your oven to 350* Fahrenheit.

Get a loaf or brownie pan of your choosing and line with parchment paper.

Add ¾ of the brownie mixture to the bottom of the pan, then add your Oreos or your cookie of choice on top.

* If you want to use a different cookie or chocolate bar of your choice, then I say dealer's choice and share your devious ideas!

Layer the cookies fully and evenly across the top of the brownie batter.

Add the cookie batter over the cookies and brownie batter, and smooth until evenly flat across the top.

Add the leftover brownie batter on top of all that, and now you have constructed a large concoction of sinful heaven.

Bake in the oven for 25-30 minutes or until you see a hard top.

The most crucial step is allowing this creation to cool and set in the freezer.

Leave in the freezer for a minimum of 1 hour, if you can last that long!

 

Now enjoy with caramel on top or even ice cream!
